Almond Cake

  1. Preheat oven to 350 degrees
  2. Line an 8" springform pan with baking parchment or butter and flour a bundt pan
  3. Cream butter and sugar together until light and fluffy. Add almond paste and beat well. Add eggs one at a time and beat.
  4. Add baking powder, salt, almond extract and liquor; stir to combine well.
  5. Fold in flour gently and do not overmix.
  6. Pour into prepared pan.
  7. Bake for 35-45 minutes or until golden brown and toothpick comes out clean; make sure you do not underbake.
  8. Cool slightly on a cookie rack.
  9. SERVING SUGGESTIONS:
  10. DustWITH POWDERED SUGAR AND SERVE WITH FRESH BERRIES.
