Chocolate Chip Butterscotch Bars

  1. Preheat oven to 300u0b0.
  2. Grease an 8 x 8-inch baking pan. Combine flour and soda in a warm bowl.
  3. Mix well with a wire whisk; set aside.
  4. In large bowl use an electric mixer to blend the sugar and butter. Add egg and vanilla; beat at medium speed until light and smooth. Scrape down the sides of the bowl, then add the flour mixture, pecans and chocolate chips.
  5. Blend at low speed until just combined.
  6. Do not overmix.
  7. Transfer batter into prepared pan and level top with a rubber spatula.
  8. Bake in center of oven for 35 to 45 minutes or until toothpick comes out clean, but center is still soft.
  9. Cool on rack to room temperature.
  10. Cut with sharp knife into 1 x 2-inch bars.
  11. Makes about 16 bars.
