Pear Pie With Cheddar Topping
- *Unbaked pastry for a 9" single crust pie
- *1/2 tsp cinnamon
- *4 large fresh pears - about 2 pounds
- *1/3 C sugar
- *1-2 tbsp cornstarch
- *1/4 tsp salt
- TOPPING:
- *1/2 C sifted flour
- *1/4 tsp salt
- *1/4 C sugar
- *1/2 C shredded sharp Cheddar cheese
- *1/4 C melted butter
- 1 - pare, core & slice pears to measure 5 cups. Combine sugar, cornstarch & salt. Mix with pears and turn into pie shell.
- 2 - prepare topping by combing flour, salt, sugar, cheese & melted butter until crumbly. Sprinkle topping on pears.
- 3 - bake on low rack in a 425 degree oven for about 25-30 minutes or until pears are tender & crust is crisp & golden brown. Serve warm topped with ice cream or whipped cream, if desired.
- IMPORTANT - bake on bottom rack!
