Maw Maw'S Good Old Fashioned Chicken Stew

  1. 1. Start boiling pot 8 hours
  2. before serve time
  3. 2. After 3 hours replace water
  4. (about 2/3 full) bring back
  5. to boil
  6. 3. Add 1/4 cup sea salt, 1/8 cup
  7. freshly ground pepper
  8. 4. After 30 minutes add 4
  9. sticks of Butter and
  10. Chicken: 10 lbs dark, 5
  11. lbs. white w/ bones (can
  12. place chicken in a net bag
  13. so after cooking you can
  14. remove it and pick out
  15. bones if desired)
  16. 5. Boil and break up chicken
  17. with paddle for 2 1/2 hours
  18. keeping water at about 2/3
  19. level
  20. 6. Mix in 2 gallons Whole Milk
  21. and 1 cup All-Purpose
  22. Flour, and then add to stew
  23. with 1/4 cup Texas Pete, and
  24. 4 cups of high quality
  25. Chicken broth.
  26. 7. Return to boil, stir for 10
  27. minutes then start reducing
  28. heat stirring frequently
  29. 8. Reduce fire to no flame at
  30. least 1
  31. hour prior to serving
