Jambalaya

  1. 1. Put oil in a heavy dutch oven style pot on the stove. Brown the pork ribs, then remove from pan.
  2. 2. Put the onion, bell pepper and green onions in the pot and let simmer while you cut up the pork ribs and the sausage.
  3. 3. Once meats are cut up, add them to the vegetables and let it cook down.
  4. 4. Put a measuring cup in the sink and drain your meat and vegetables into the measuring cup. It should give you about 1 cup of liquid. Add water to make it 2 cups and then pour the water into the pot with the meat and vegetables. Add an additional two cups of water and then 2 cups of the uncooked rice. Let the water come to a boil. Cover the pot and reduce heat to a simmer for about ten minutes or so. Then turn off the heat completely but leave the pot covered for some time. This will cook the rice.
  5. 5. We serve this with green beans on the side.
