Jambalaya
- 1 pkg boneless pork ribs
- 1 lb spicy mixed smoked sausage
- 1 T oil
- 1 large onion, chopped
- 1/2 bell pepper
- 1 bunch of green onions
- 2 cups long grain rice uncooked
- 1. Put oil in a heavy dutch oven style pot on the stove. Brown the pork ribs, then remove from pan.
- 2. Put the onion, bell pepper and green onions in the pot and let simmer while you cut up the pork ribs and the sausage.
- 3. Once meats are cut up, add them to the vegetables and let it cook down.
- 4. Put a measuring cup in the sink and drain your meat and vegetables into the measuring cup. It should give you about 1 cup of liquid. Add water to make it 2 cups and then pour the water into the pot with the meat and vegetables. Add an additional two cups of water and then 2 cups of the uncooked rice. Let the water come to a boil. Cover the pot and reduce heat to a simmer for about ten minutes or so. Then turn off the heat completely but leave the pot covered for some time. This will cook the rice.
- 5. We serve this with green beans on the side.
