Chicken And Almond Bake
- 3 cups cooked and diced chicken
- 1 cup sliced celery
- 1/2 cup toasted almonds
- 1/4 cup finely chopped Vadalia onion
- 2 cups cooked brown rice
- 1 cup grated cheese
- White Sauce
- 2 tbsp butter
- 2 tsp flour
- 2 cups milk
- 1 cup Hellman's Mayonnaise
- Combine first 5 ingredients in a bowel and set aside.
- In a pan, combine butter and flour, cook on stovetop on medium heat, stirring until butter melted and well blended.
- Add milk gradually cooking over a low heat until thickened. Add mayonnaise stiring well.
- Combine with chicken mixture in bowl.
- Pour into greased casserole dish, sprinkle with cheese, bake at 350 approximately 3o minutes or until bubbling.
