Easy Frittata Omlette

  1. Brown the sausage in a skillet, keep cutting at it with the spatula so that it ends up quite crumbled when it is cooked through.
  2. Remove the sausage, and brown the onion and clove until they are almost clear over medium heat, in the same skillet.
  3. Mix your eggs, water, and milk together, whisking furiously until it gets into a lather. Add in the pancake mix (dry), the nutmeg, and lightly stir.
  4. Heat a separate skillet, oven safe, to medium high, when water droplets sizzle on it, add just enough oil or butter to thinly coat it.
  5. Pour in the egg mixture. Do not stir!
  6. After two minutes, reduce the heat to medium and cover.
  7. Cook for three minutes longer.
  8. Remove the cover, and place into a pre-heated oven at 300 degrees. I you like cheese, cover the frittata now with how much you want.
  9. Bake until golden brown.
  10. Serve open faced (traditional), or fold in half, with a good hot sauce.
