Easy Frittata Omlette
- 4 eggs
- 2 tablespoons of water
- 5 tablespoons of milk
- 4 tablespoons of instant pancake mix
- Browned sausage (crumbled)
- 1/2 of a yellow onion( chopped)
- 1 garlic clove (chopped)
- A pinch of nutmeg
- Brown the sausage in a skillet, keep cutting at it with the spatula so that it ends up quite crumbled when it is cooked through.
- Remove the sausage, and brown the onion and clove until they are almost clear over medium heat, in the same skillet.
- Mix your eggs, water, and milk together, whisking furiously until it gets into a lather. Add in the pancake mix (dry), the nutmeg, and lightly stir.
- Heat a separate skillet, oven safe, to medium high, when water droplets sizzle on it, add just enough oil or butter to thinly coat it.
- Pour in the egg mixture. Do not stir!
- After two minutes, reduce the heat to medium and cover.
- Cook for three minutes longer.
- Remove the cover, and place into a pre-heated oven at 300 degrees. I you like cheese, cover the frittata now with how much you want.
- Bake until golden brown.
- Serve open faced (traditional), or fold in half, with a good hot sauce.
