Spiked Apple Cider Sparkle
- 1/4 cup Ginger Syrup
- 1 bottle sparkling apple cider
- 1 bottle of champagne, sparkling wine, cava, or red sparkling wine
- 4 cinnamon sticks plus more for garnish
- 6 pieces crystallized ginger optional for garnish
- Ginger Syrup
- 2 cups sugar
- 1 six-inch piece fresh ginger, finely diced
- 1 cup of water
- Prepare Ginger Syrup first:
- add water and sugar to sturdy/heavy stove pot and heat under warm heat till melted.
- Cut up ginger into inch long strips and add to sugar water on stove. Simmer for at least 1 hr, stir occasionally and watch to prevent burning.
- Let cool before transferring to glass for storage - can be kept in fridge for 2 months
- Cocktail:
- Add cooled syrup, sparkling cider and cinnamon sticks to large pitcher.
- Pour in your preferred sparkling wine/champagne and mix.
- Add cinnamon sticks to everyone's glass before serving
