Vegetable Soup

  1. Heat oil and butter 1 minute.
  2. Add onion, garlic, carrots, and bell pepper and cook 6 min.
  3. Add meat and saute 5 min. Drain.
  4. Add tomatoes, broth, beans, wine, vinegar, mushrooms, zucchini, and herbs. Bring to a boil and then simmer 15 mins.
  5. Add pasta and cook 15 mins.
  6. Add spinach and cook 4 mins.
  7. Add black pepper. Serve topped with cheese.
