Vegetable Soup
- 1 tbsp. olive oil
- 1 tbsp. butter
- 1 chopped onion
- 5 chopped garlic cloves
- 1 chopped bell pepper
- 12 chopped baby carrots
- 1 lb. ground turkey
- 1 turkey sausage
- 1 sliced zucchini
- 1 package sliced mushrooms
- 1 28 oz. can crushed tomatoes
- 28 oz. chicken broth
- 1/2 cup white wine
- 1/2 cup red wine
- 1 chopped tomato
- 1 tbsp. balsamic vinegar
- 1 can white beans
- 1 can kidney beans
- Chopped fresh basil
- Chopped fresh parsley
- Chopped fresh rosemary
- Dried oregano
- Red pepper flakes
- 1 cup whole wheat pasta
- 1 bag baby spinach
- Black pepper
- Parmesan cheese
- Heat oil and butter 1 minute.
- Add onion, garlic, carrots, and bell pepper and cook 6 min.
- Add meat and saute 5 min. Drain.
- Add tomatoes, broth, beans, wine, vinegar, mushrooms, zucchini, and herbs. Bring to a boil and then simmer 15 mins.
- Add pasta and cook 15 mins.
- Add spinach and cook 4 mins.
- Add black pepper. Serve topped with cheese.
