White Chicken Chili
- 3 cans of Great Northern beans (rinsed and drained
- 3 cups of cubed chicken breast (rotassire works great)
- 1 15oz jar of Alfredo sauce
- 8 oz block of cream cheese cut into 1 inch blocks
- 3 cups of chicken broth
- 1 4 oz can of diced mild chilies
- 1.5 cups of frozen corn
- .5 cup of shredded Monterey Jack cheese
- .5 cup shredded Pepper Jack cheese
- 1 cup reduced fat sour cream
- .25 cup chopped yellow pepper
- 1 small onion chopped
- 3 cloves of garlic minced
- 1 Tbsp of ground cumin
- 1 tsp white pepper
- .5 tsp cayenne
- Easy method
- * Add everything to crock pot.
- * Cover and cook on low for 3-4 hours.
- If you have some time
- * Add the onions and garlic to a hot skillet with 2Tbsp butter. Saute until browned.
- * Replace the diced chicken with 3 boneless skinless breasts that you saute in same skillet as garlic and onions.
- * When chicken is cooked pull into bite sized pieces.
- * Add all ingredients to crock pot. Cover and cook on low for 3 to 4 hours.
