Beef And Zucchini Mediterranean

  1. Crush 1 clove garlic and mix with Greek Seasoning and pepper.
  2. Press mixture into both sides of steak and cook in 1/2 Tbsp olive oil over medium heat for 3-5 minutes per side.
  3. Remove steak and cut into 1/2 cubes.
  4. Slice zucchini in half lengthwise and microwave cut side down in 1/2-in water for 2 minutes.
  5. Use a melon scoop or spoon to remove pulp from centers.
  6. Chop pulp, tomato & olives.
  7. Stir together 1 clove chopped garlic, thyme, oregano, finely crumbled feta cheese and beef cubes.
  8. Place zucchini halves in a baking dish; brush sides with remaining olive oil.
  9. Fill with beef & vegetable mixture; bake in a preheated 350F oven for 8-10 minutes.
