Caramel Apple Shortcakes W Cider Reduction

  1. Preheat 375, parchment paper on sheet
  2. Whisk flour, 3 T sugar, baking powder, baking soda, salt in processor bowl
  3. Process in butter
  4. Add enough buttermilk to soft dough (start w half)
  5. Pat dough to 1.5" thickness, cut 6 rounds
  6. Brush w milk or cream, sprinkle w sugar
  7. Bake 12-15 min & cool
  8. Melt butter in pan
  9. Add van bean seeds & apples
  10. Cook till apples brown, 5-7 min
  11. Add sugar
  12. Cook till apples are caramelized
  13. Add apple brandy, cook 5 min
  14. Combine apple cider reduction ingredients
  15. Bring to boil over high heat
  16. Cook stirring occasionally 25-30 min till thick & syrupy
  17. Cool to RT, remove van bean & cinn stick
