Grandmother'S Japanese Fruitcake
- 1/2 cup margarine
- 1/2 cup brown sugar
- 2 eggs
- 2/3 cup butter milk
- 2 cups self rising flour
- 1/2 cup McCormicks cinnamon
- 1/4 tsp cloves
- 1 cup blackberry (or other fruit) jam or preserves
- 1 cup pecan halves
- 2/3 cups pet milk
- 1 stick margarine
- 1 1/2 cup sugar
- 1 tsp vanilla
- 2 cups coconut
- Cream 1/2 cup margarine with brown sugar. Add 2 eggs and buttermilk and beat.
- Sift together flour, cinnamon, cloves, and add to the sugar mixture.
- Add the fruit (jam, preserves)
- Cook 25 to 30 minutes in prepared cake pans.
- Icing: top cake with pecan halves. Mix the pet milk, stick of margaine, 1 1/2 cups sugar, vanilla and cocnut - spread over cake
