Chex Mix Fish
- 1 - 1.5 lbs Tilapia fillets (or another white firm fish)
- 4 cups Chex Mix
- 2 eggs
- Mustard Sauce
- 2 Tblsp butter
- 1 leek, thinly sliced
- 4 Tblsp hot mustard (Spicy brown - whatver you like)
- 1/2 cup white wine
- juice of 1/2 lemon
- 1/4 cup heavy cream (optional)
- Preheat oven to 400
- Process Chex Mix in blender or food processor until crumbly (some larger bits will remain - that's OK)
- Mix eggs in one bowl. Dredge tilapia filets in egg, then in Chex Mix until well coated. PLace on baking sheet.
- Bake 7-10 minutes a side,
- until cooked through and flaky
- Meanwhile, saute the leek in the butter until soft
- Add hot mustard, white wine and lemon juice; cook 5 minutes until heated through. Add cream, cook 2 minutes more until sauce thickens.
- Remove fish from oven, top with mustard sauce and serve.
