Chex Mix Fish

  1. Preheat oven to 400
  2. Process Chex Mix in blender or food processor until crumbly (some larger bits will remain - that's OK)
  3. Mix eggs in one bowl. Dredge tilapia filets in egg, then in Chex Mix until well coated. PLace on baking sheet.
  4. Bake 7-10 minutes a side,
  5. until cooked through and flaky
  6. Meanwhile, saute the leek in the butter until soft
  7. Add hot mustard, white wine and lemon juice; cook 5 minutes until heated through. Add cream, cook 2 minutes more until sauce thickens.
  8. Remove fish from oven, top with mustard sauce and serve.
