Turkey Sausage And Spinach Pasta
- 2 tablespoons olive oil
- 1/2-1 or 3 whole pounds Italian style turkey or chicken sausage, casings removed
- 1 1 red onion, finely chopped.
- 4 cloves 4 cloves garlic, minced
- 10 ounces 10 oz, frozen, chopped spinach, thawed and squeezed dry or 1 bag fresh
- 1 cup evaporated, low fat milk
- 2 tablespoons reduced fat cream cheese or Neufchatel
- 1/4 teaspoon freshly ground black pepper to taste
- 1/3 cup 1/3 cup grated parmesan cheese (Reggiano preferred)
- 10 ounces farfalle or other shaped pasta
- In a large pot of boiling water, cook the pasta until al dente and drain.
- Crumble in the sausage until no longer pink, about 3 minutes. Add the onion and garlic and cook , stirring frequently about 7 minutes.
- Stir the spinach into the skillet and cook until heated through, about 2 minutes. Add the milk, cream cheese and pepper and cook, stirring freuently until slightly thickened, about 4 minutes.
