Ivanchukov'S Hungarian Chicken And Rice Soup
- 1 tbs butter
- 2 tbs oil
- 1 medium onion, chopped
- 1 stalk celery, sliced
- 3/4 cup green pepper
- 1 clove garlic, minced
- 1 8oz can stewed tomatoes
- 32 oz chicken broth
- 3 tbs hot Hungarian paprika
- 1/4 tsp thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 cup long grain white rice
- 1 cup sliced cooked chicken
- In large saucepan heat butter and oil. Add onion, celery, green pepper, and garlic; saute 3-5 min. Add tomatoes, broth,thyme, salt, pepper, paprika, and rice. Bring to boil, reduce heat to simmer. Cover and simmer for 15 min. Add chicken and simmer for 5 min. or until rice is tender.
