Eggnog Bread
- Bread:
- 2 eggs, beaten
- 1 cup eggnog, canned or fresh
- 2 Tablespoons Rum or 2 teaspoons rum exract
- 1 teaspoon vanilla
- 1/3 cup sour cream
- 1 cup sugar
- 1/2 cup butter, melted
- 2 1/4 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon nutmeg
- Glaze:
- 2 Tablespoons butter, melted
- 2 Tablespoons eggnog
- 1 cup powdered sugar
- 1 teaspoon rum or 1/2 tsp rum extract
- Preheat oven to 350 degrees F.
- Grease bottom of a 9x5 inch loaf pan.
- In a large bowl sift together dry ingredients.
- In another bowl mix together the eggs, eggnog, rum, vanilla, sour cream, sugar, and melted butter.
- Pour the eggnog mixture into the dry ingredients and stir until just until combined.
- Pour into greased loaf pan. Bake 45-50 minutes.
- Let cool in pan for 5 minutes before removing bread to cool on wire rack. Add glaze while bread is still warm.
- For glaze: Combine the melted butter, eggnog, powdered sugar and rum. Drizzle over warm bread and allow to cool completely.
