Amy'S Aunt'S Italian Rabbit

  1. Bake the rabbit at 400 degrees for one hour, turning once.
  2. In a pan, put olive oil, carrots, celery, garlic, and green olives without pits (smash them with a knife). Soften a little. Put rabbit back in pot. Add wine, vinegar, and balsamic (the total amount is not as important as the porportions--start with about a cup each of wine and vinegar, 1/2 cup balsamic). Add salt and pepper to taste. Simmer 1/2 hour.
