Amy'S Aunt'S Italian Rabbit
- 1 rabbit--cut up into pieces
- 1 cup carrots, cut in chunks
- 1 cup celery, cut in chunks
- Garlic--to your taste
- 1 cup green olives with pits (Scilian)
- 1 tablespoon tomato paste
- 1 glass red wine
- 1 glass wine vinegar
- 1/2 glass balsamic vinegar
- Salt and pepper
- Bake the rabbit at 400 degrees for one hour, turning once.
- In a pan, put olive oil, carrots, celery, garlic, and green olives without pits (smash them with a knife). Soften a little. Put rabbit back in pot. Add wine, vinegar, and balsamic (the total amount is not as important as the porportions--start with about a cup each of wine and vinegar, 1/2 cup balsamic). Add salt and pepper to taste. Simmer 1/2 hour.
