Scallop And Avocado Tostado
- 1/4 cup cilantro leaves
- 1 cup micro greens or thinly sliced romaine lettuce
- 2 ripe Avocados halved
- 1/4 t lime zest
- 1 T lime juice
- 1/2 t salt divided
- 1/4 t ground cumin
- 1/8 t paprika
- Generous pinch of cayenne pepper
- 12 scallops cut in half crosswise
- 1 T Vegetable oil
- 24 tortilla chips
- 1. combine cilantro and greens and chill
- 2. mash avocado and mix in lime zest, lime juice and 1/4 t salt - chill
- 3. Combine cumin, paprika, cayenne pepper and 1/4 t salt- heat oil in large nonstick skillet over medium high head. sprinkle scallops on both sides with seasoning mixture and cook 1 minute on each side or until scallops are opaque
- 4. Spread reserved avocado mixture evenly on tortilla chips; top with cilantro mixture; top each with a scallop
