Melting Dessert

  1. Heat oven to 350u0b0.
  2. Grease a 9-inch pie plate.
  3. Chop 1/2 cup dried apricots; set remainder aside for decoration.
  4. In medium size bowl, combine chopped apricots, coconut, flour and grated orange peel; toss to mix well.
  5. Set aside.
  6. In large bowl, using wire whisk or fork, beat eggs, baking mix, milk, melted butter, granulated sugar and vanilla extract until thoroughly blended. Stir in apricot-coconut mixture.
  7. Pour mixture into prepared pie plate.
  8. Bake for 35 to 40 minutes, until wooden pick inserted in center comes out clean.
  9. Cool completely on wire rack.
