Blueberry Muffins

  1. 1) Preheat oven to 415 degrees
  2. 2)Place muffin sleeves in muffin pan.
  3. 3) Sift flour and baking powder into a large bowl. Stir in sugar and make a well in the center.
  4. 4) Add combined melted butter, eggs and milk all at once and stir until just blended. (Do not overmix; batter should look quite lumpy)
  5. 5)Fold in blueberries thoroughly but lightly.
  6. 6) Spoon batter into the prepared tin.
  7. 7) Sprinkle on sugar, if desired.
  8. 8) Bake for 20 minutes or until golden brown.
  9. 9) Transfer to a wire cooling rack and allow to cool.
  10. 10) Sprinkle with icing, if desired.
