Blueberry Muffins
- 3 cups plain flour
- 1 Tbs baking powder
- 3/4 cup soft brown sugar
- 4 oz. butter, melted
- 2 eggs, lightly beaten
- 1 cup skim milk
- 1 cup blueberries
- Icing/Sugar for sprinkling
- 1) Preheat oven to 415 degrees
- 2)Place muffin sleeves in muffin pan.
- 3) Sift flour and baking powder into a large bowl. Stir in sugar and make a well in the center.
- 4) Add combined melted butter, eggs and milk all at once and stir until just blended. (Do not overmix; batter should look quite lumpy)
- 5)Fold in blueberries thoroughly but lightly.
- 6) Spoon batter into the prepared tin.
- 7) Sprinkle on sugar, if desired.
- 8) Bake for 20 minutes or until golden brown.
- 9) Transfer to a wire cooling rack and allow to cool.
- 10) Sprinkle with icing, if desired.
