Cherry Chocolate Gelato
- 1 3/4 cups 1% milk
- 2 tablespoons cornstarch
- 1/3 cup sugar
- 2 teaspoons unsweetened cocoa powder
- 2 cups fresh, pitted cherries
- 1 1/2 tablespoons sugar
- 1 teaspoon vanilla extract
- a few small drops of white truffle oil
- Heat milk, stirring occasionally. Add sugar, cornstarch and cocoa powder, Mix well and bring to boil, stirring often.
- Remove from heat, and pour in 1.5 quart plastic container. Place in fridge/freezer for 30 minutes.
- Blend cherries, sugar, extract and oil until smooth. place in fridge until the thirty minutes is up.
- Whisk gelato base and cherry puree until blended.
- Place in freezer for 45-60 minutes. Use a spatula to scrape edges and mix until smooth. Repeat until thoroughly frozen.
- Do not store longer than 2 weeks.
