Irish Sherry Trifle
- 1 c. sweet sherry
- 1 pt. each: strawberry and lime gelatin, prepared and partially set
- 2 c. prepared custard
- 1/2 c. strawberry or raspberry jam
- 2 c. whipped dairy cream
- sponge cake or pound cake
- 1 pkg. (about 12) ladyfingers
- a few cherries or strawberries
- Put a layer of sponge cake, about 3/4 inch thick, at bottom of dish.
- A clear glass dish (about 3-quart) is preferable.
- Coat lightly with jam and saturate with half of sherry.
- Arrange ladyfingers in standing position around dish.
- Cover sponge cake with 1/2-inch layer of both gelatins.
- Cover with layer of cool custard.
- Repeat procedure 2 more times.
- Place whipped cream on top and garnish with cherries or strawberries.
- Chill and serve. Makes 10 to 12 servings.
