Chicken Meatballs With Spaghetti
- 1 lb. ground chicken
- 2 cloves garlic minced
- 1/2 bunch of parsley chopped
- 1 egg
- 1/4 cup shredded parmesan cheese
- 2 Tablespoons plain breadcrumbs
- 1 Tablespoon Olive Oil
- 1 lb spaghetti
- 1 jar favorite marinara sauce
- Fresh Basil (optional)
- Parmesan Cheese (optional)
- Chili Flakes(optional)
- Mix Chicken, Garlic, Parsley, Egg, cheese and breadcrumbs until mixed evenly.
- Pour Olive Oil into pan, scoop out chicken mixture ( I use an 1 1/2 in. Ice cream scooper) into desired size meatballs. Brown meatballs on one side until crispy and then flip over. When they look mostly cooked through, pour in Marina sauce and simmer for approx. 20 15-20 minutes until sauce is heated through and meatballs are cooked.
- Cook spaghetti according to the package.
- Serve spaghetti and sauce together. I like to chop fresh basil and put in the sauce at the last minute. We eat it with more grated parmesan on top and chili flakes to give it a little kick! Enjoy!
