Turkey Tacos
- 1 lb. raw ground turkey breast
- 1 Tbsp. oil
- 1 medium onion, finely chopped
- 2 tsp. chili powder
- 1/2 tsp. cumin
- 1/4 tsp. oregano
- 2 cloves garlic, minced
- dash of cayenne pepper
- 2 1/2 tsp. cornstarch, mixed with 3 oz. cold water
- 4 Tbsp. salsa
- 1/2 tsp. lite salt
- 4 tortillas (corn or wheat)
- 4 Tbsp. fat-free sour cream (optional)
- Heat oil in heavy skillet.
- Add onion; cook 2 to 3 minutes, until tender.
- Add turkey, stirring constantly over medium heat until turkey is no longer pink.
- Stir in salsa, spices and cornstarch mixture; heat through and simmer to thicken.
- Serve on corn or wheat tortillas; garnish with 1 tablespoon fat-free sour cream.
- Serves 4.
