Spaghetti With Lobster
- 2 Lobsters (1.5-2 lbs ea.)
- 1 tsp Old Bay seasoning
- 1/4 tsp crushed red pepper
- 1 tsp crushed dried Thyme
- 2 tblspn Extra virgin olive oil
- 1 medium onion, diced
- 2 tbsp minced garlic
- 1 pt heavy cream
- 7 Roma Tomatoes diced
- 1 stick butter
- Salt & pepper to taste
- 12 oz. spaghetti
- 1/2 cup grated Parmesano Regiano
- If using pre-steamed lobster, remove all meat from shell and claws and cut into chunks. If using fresh lobster, bring large pot of water to boil & drop lobsters into pot and boil for 3 minutes. Remove lobsters from water and let cool until ready to handle. Remove meat from shell and claws and cut into chunks. Sprinkle lobster meat with Old Bay, red pepper and thyme. Set aside while preparing sauce.
- Preparing sauce: Heat olive oil in large pan over medium heat. Add onions and saute' until translucent, about 4-6 minutes. Add garlic and saute' for a minute then add salt and pepper to taste. Add lobster meat and cream and bring to a simmer for 5-8 minutes. Add diced tomatoes and butter and simmer 2 minutes. Keep warm. Prepare spaghetti to al dente (or according to instructions on package) and drain. Transfer pasta to serving plate and top with lobster and sauce. Top with grated Parmesano Regiano!!
