Thai Taco Salad
- Salad
- 1 head green cabbage sliced in ribbons
- 1 cup sugar or Chinese peas, sliced
- 1/2 red pepper sliced in thin strips
- 1/2 green pepper sliced thin
- 1 cup mung bean sprouts or 1/2 c grated carrot
- 1 package Kanimi shrimp combo or other ready to eat seafood
- Dressing
- 1 cup bottled Peanut Sauce
- 1/2 cup sweet chili sauce
- 1 t dark sesame oil
- Garnish
- 1 cup cashews or peanuts
- 1/2 cup toasted coconut
- 1/4 c chopped cilantro (optional)
- Prepare vegetables and combine in large bowl. Add shrimp & crab or other seafood. Mix well.
- Whisk dressing ingredients together in separate bowl.
- Pour dressing over greens and mix well.
- Sprinkle nuts and cilantro over the salad. Top with toasted coconut.
