Wild Rice Baron
- 2 c. raw wild rice
- 4 c. water
- 2 tsp. salt
- 2 lb. ground beef
- 1 lb. mushrooms
- 1/2 c. chopped celery
- 1 c. chopped onion
- 1/2 c. butter
- 1/4 c. soy sauce
- 2 c. dairy sour cream
- 2 tsp. salt (or less)
- 1/4 tsp. pepper
- 1/2 c. slivered almonds
- Gently cook rice, water and 2 teaspoons salt (covered) for 45 minutes.
- Drain.
- Brown beef.
- Rinse mushrooms; cut tips off stems. Slice and saute with onion and celery in butter 5 to 10 minutes. Combine soy sauce, sour cream, salt and pepper.
- Add cooked rice, beef, onion, mushrooms and celery mixture and almonds.
- Toss lightly.
- Place in 3-quart casserole.
- Bake at 350u0b0 for 1 hour, uncovered.
- Add water, if needed.
- Season to taste.
- Stir several times and garnish with few almonds.
- Serves 12 to 16.
