Baked Soybeans
- 2 1/8 c. soybeans (dry)
- 3 1/2 c. tomatoes (one No. 2 1/2 can)
- 1 c. sauteed onions
- 1/4 c. oil
- 6 1/2 c. water
- 1 to 2 Tbsp. blackstrap molasses
- 1/4 c. brown sugar, packed
- 2 tsp. salt
- 1/4 c. lemon juice
- 1 tsp. sweet basil
- 1/2 c. tomato paste
- Pressure cook soybeans in water 1 hour.
- Drain juice from tomatoes and add to sauteed onions in heavy skillet.
- Simmer.
- Cut tomatoes in small pieces and add to juice.
- Add brown sugar, oil and salt.
- Mix.
- Add to cooked soybeans.
- (I often just add all these ingredients to beans without any precooking.)
- Bake at 350u0b0 until juice is thickened.
- Add lemon juice and sweet basil.
- Add 1/2 can plain tomato paste.
- Yield:
- 8 servings.
