Gluten Free Berry Chia Seed Muffins
- 1 cup coconut flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon sea salt
- 1/4 cup honey
- 1/4 cup maple syrup
- 1 cup almond milk
- 5 eggs
- 4 tablespoons coconut oil, melted
- 1 teaspoon vanilla
- 4 tablespoons chia seeds
- 1 cup mixed berries (raspberries and blueberries)
- Pre-heat oven to 350 degrees
- Combine dry ingredients: coconut flour, baking soda and salt.
- In a separate bowl whisk together wet ingredients: honey, maple syrup, almond milk, eggs, melted coconut oil and vanilla.
- Combine wet and dry ingredients and mix well.
- Mix in chia seeds.
- Fold in your berry mix.
- Grease your favorite muffin tin and pour batter in each cup about 3/4 full
- Bake 25 minutes or until muffins are golden brown and toothpick comes out clean when inserted into the muffin.
- Remove from oven. Let cool, then transfer to a wire rack to cool.
