Nutritious Sweet Potato Soup

  1. Put 3 tablespoons olive oil into cooking pot and heat. Add chopped onions, leek and garlic and saute until slightly tender and light brown (about 5 minutes.) Add sweet potatoes and allow the flavor of the chopped ingredients to blend into the sweet potatoes (about 10 minutes.) Add the 2 cans of chicken broth and simmer until sweet potatoes are slightly tender. Cool mixture. Pour mixture into the blender and puree until smooth. Take mixture and pour back into the cooking pot and allow to cook on a low flame for 15 minutes. Add salt and pepper to taste. Serve with a teaspoon of plain yogurt as topping.
