Reuben Casserole
- 1/2 lb. (8 oz.) ziti rigati
- 1/4 c. butter or margarine
- 1/4 c. all-purpose flour
- 3 Tbsp. Dijon mustard
- 1/4 tsp. pepper
- 3 c. milk
- 2 c. shredded Swiss cheese
- 1/2 lb. sliced corned beef, chopped, or 1 c. chopped , fully cooked ham
- 1/2 c. sliced green onions
- 1 (16 oz.) can sauerkraut, drained
- 1 c. buttered rye bread cubes (optional)
- Cook ziti rigati; drain.
- In medium saucepan, melt butter. Stir in flour, mustard and pepper.
- Blend in milk.
- Cook, stirring constantly, until thickened and bubbly.
- Add cheese; stir until melted.
- Combine ziti, cheese sauce, corned beef and onions; mix well.
- In a 13 x 9-inch baking dish, layer one-half each of the ziti mixture and sauerkraut.
- Repeat layers.
- Top with bread cubes.
- Bake at 350u0b0 until hot, about 30 minutes.
- Makes 6 to 8 servings.
