Baked Vegetable Omelet
- 2 c. shredded Pepper Jack, Monterey Jack or Cheddar cheese
- 3 c. frozen broccoli, thawed, drained and chopped
- 1 1/2 c. chopped tomatoes
- 1/4 to 1/2 c. diced green and red pepper
- 1/2 c. green onion or regular onion, chopped
- 2 c. fresh mushrooms, sliced
- 2 c. additional Cheddar cheese
- 2 c. milk
- 1/2 c. all-purpose flour
- 1 tsp. salt
- dash of pepper
- 6 eggs
- Lightly grease a 9 x 13-inch baking dish.
- Layer Pepper Jack cheese, vegetables, then Cheddar cheese in dish.
- Beat milk, flour, salt, pepper and eggs until smooth; pour over cheese. Bake, uncovered, for 40 to 45 minutes at 350u0b0 until the egg mixture is set.
- Let stand 10 minutes before serving.
- Great for brunch!!
