Tandoori Quinoa Bowl
- 1 c. cooked quinoa
- 1 T. oil
- 1 T. diced red onion
- 1 t. minced ginger
- 1 t. minced garlic
- 1 large zucchini, chopped
- 1 can chickpeas
- 1/2 t. turmeric
- 1/2 t. chili powder (or paprika)
- 1 t. ground cumin
- 1 t. ground coriander
- 1 t. cinnamon
- 1 t. cilantro
- 1/2 c. yogurt
- 1. Heat oil in saute pan. Add onion, ginger and garlic and saute until onion begins to turn translucent.
- 2. Add zucchini, season with salt and pepper, and saute until cooked through.
- 3. Stir in chickpeas and next five ingredients. Heat on low until chickpeas warmed through.
- 4. Remove from heat, stir into cooked quinoa. Stir in cilantro and yogurt. Ready to serve!
