Tandoori Quinoa Bowl

  1. 1. Heat oil in saute pan. Add onion, ginger and garlic and saute until onion begins to turn translucent.
  2. 2. Add zucchini, season with salt and pepper, and saute until cooked through.
  3. 3. Stir in chickpeas and next five ingredients. Heat on low until chickpeas warmed through.
  4. 4. Remove from heat, stir into cooked quinoa. Stir in cilantro and yogurt. Ready to serve!
