Vegetarian Bulgur Chili
- 1 tablespoon olive or canola oil
- 2 onions, chopped
- 2 green & or red peppers, chopped
- 3 cloves garlic, crushed
- 2 cups mushrooms, sliced
- 1 can 19 oz red kidney beans, drained & rinsed
- 1 can 19 oz chick peas, drained & rinsed
- 1/2 cup uncooked bulgur
- 28 oz can stewed tomatoes
- 1 cup bottled salsa ( mild or medium)
- 1/2 cup water
- 2 tsp salt
- 1/2 tsp pepper
- 1 tbsp chili pepper
- 1 tsp basil
- 1/2 tsp oregano
- 1/4 tsp cayenne
- 1 tbsp cocoa ( baking cocoa, unsweetened)
- 1 tsp sugar
- 1/2 tsp ground cumin
- Heat oil in a large pot. Saute onions, pepper and garlic for 5 minutes on medium heat. Add mushrooms and saute 5 minutes longer. Add remaining ingredients, bring to a boil and simmer, covered for 25 to 30 minutes.
- if desired , add 1 can drained corn niblets.
