Sauerkraut Chocolate Cake
- 2/3 c. margarine or butter
- 1 1/2 c. sugar
- 3 eggs
- 1 tsp. vanilla
- 1/2 c. unsweetened cocoa
- 2 1/4 c. sifted all-purpose flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/4 tsp. salt
- 1 c. water
- 2/3 c. rinsed, drained and chopped sauerkraut
- whipped cream frosting
- Preheat oven to 350u0b0.
- Grease and flour 2 (8-inch) square or round baking pans.
- Thoroughly cream margarine with sugar. Beat in eggs and vanilla.
- Sift together cocoa, flour, baking powder, baking soda and salt.
- Add dry mixture.
- Stir in sauerkraut. Spoon into prepared baking pans.
- Bake about 30 to 35 minutes. Let cool.
- Spread with whipped cream frosting.
- Makes 8 servings.
