Chicken Tamale Pie
- 1 chicken
- 3 large onions
- 2 beads of a garlic
- 1 tsp. basil (dried)
- 2 cloves
- 4 peppercorns
- 1 c. ripe olives, chopped
- 1/3 c. green chiles, chopped
- 1/2 tsp. salt
- 1/2 tsp. sugar
- 1 tsp. chili powder
- 2 c. Monterey Jack cheese (sharp)
- 2 c. sour cream
- Pan-boil chicken approximately 30 minutes or until tender with the garlic, cloves, onions, salt and basil.
- Remove chicken and take flesh from the bones.
- Strain the water the chicken was boiled in and save 2 cups for tamale mix.
- Chop chicken and onions (it was cooked with) and combine with chiles, olives, sugar, chili powder and salt to taste.
- Mix in sour cream.
- Place mixture in a casserole pan and top with grated cheese.
- (Preheat oven to 375u0b0.) Cook until top has browned.
