Chicken Indian Style
- 0.5Kg chicken breast cut in small pieces.
- freshly ground black pepper.
- 1 big white onion finely chopped.
- 1 apple sliced.
- 2 Ts oil
- 1/2 cup coconut milk
- 500 ml chicken broth
- 1 ts cumin
- 1 ts coriander seeds
- 1 ts turmeric
- 1/4 ts cardamom
- 1/4 ts cinnamon
- 1 ts cayenne pepper (depends on your taste)
- 1 ts ginger powder
- juice of 1 orange
- Grind all the spices, with the exception of the black pepper, as much as possible.
- Season chicken with the black pepper.
- Heat the oil in a skillet or wok until it starts to smoke.
- Add the chicken pieces and seal them.
- Remove the chicken from the pan and add the onion.
- Saute the onion until soft and add the apple pieces (peeled).
- cook for another minute and add the spices and chicken back to pan.
- Stir for a minute.
- Add the chicken broth.
- Cook for about 20 minutes
- Add the orange juice and coconut milk and cook until sauce thickens.
