Open Face Gravlax Sandwiches With Guacamole
- 2 lg ripe avocados (abt 18 ou) halved, pitted, peeled
- 1 tbsp fresh lime juice
- 4 lg cherry tomatoes, diced
- 1/4 c finely chopped red onion
- 3 tbsp choppped fresh cilantro
- 1 tbsp chopped frsh basil
- 2 1/2 tsp minced seeded jalapeno chile
- 4 slices 7-grain bread, (4 x 5 1/2")toasted
- 1 c thinly sliced iceburg lettuce
- 8 ou thinly sliced gravlax or smoked salmon
- Place avocado & lime juice in medium bowl, mash coarsely w/back of fork. Mix in tomatoes, onion, cilantro, basil & jalapeno. Season w/salt & pepper.
- (Can be made 2 hrs ahead, cover, chill)
- Arrange toast on plate. Spread w/guacamole, reserving 2 tbsp for garnish. Top w/lettuce. Overlap salmon on lettuce. Garnish w/dollop of guacamole.
