Teff Cake
- 1 cup almond pulp after making almond milk(you can use almond meal instead, but maybe add 2 tbs of water)
- 3/4 cup teff flour
- 3/4 cup gluten free flour
- 1/2 cup protein powder
- 2 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 cup chopped nuts
- 6 medjool dates chopped(add more for sweeter cake)
- 1 egg
- 1 cup apple sauce
- 1/3 cup brown rice syrup
- Have 2 bowls ready. #1 needs larger bowl. Mix everything from #1 in a bowl.
- Mix everything in #2 in a smaller bowl. Then pour #2 mix into #1. Mix well.
- Line 9x9 baking pan with parchment paper. Let 2 sides hang out, so it is easier to take out the cake once it is done.
- Pour the batter into the pan. Bake at 400F for 15-20 min. I used toaster oven and took 20 min.
