Chocolate Covered Matzo
- 1 cup butter
- 1 cup light brown sugar
- 12 oz chocolate chips
- 1 package ground Heath bar.
- chopped pecans
- Matzo
- preheat oven to 450 degrees
- line a cookie sheet with foil extending over the edge of the pan. I will use the non-stick foil as it peels off nicely and saves time.
- Cover the entire pan with Matzo, like a crust, breaking up some of the pieces to make it fit if necessary.
- In sauce pan, combine butter and brown sugar and cook over med heat until mixture boils and coats a spoon. Pour mixture over matzo and bake for 4 minutes. Sprinkle 12 oz package of chocolate chips (I use special dark) and return to oven for 1 minute. Spread melted chocolate over matzo with spatula. Sprinkle Heath bar and pecans over and press lightly into chocolate.
- Refrigerate. Break into pieces. I will often freeze these.
