Chocolate Covered Matzo

  1. preheat oven to 450 degrees
  2. line a cookie sheet with foil extending over the edge of the pan. I will use the non-stick foil as it peels off nicely and saves time.
  3. Cover the entire pan with Matzo, like a crust, breaking up some of the pieces to make it fit if necessary.
  4. In sauce pan, combine butter and brown sugar and cook over med heat until mixture boils and coats a spoon. Pour mixture over matzo and bake for 4 minutes. Sprinkle 12 oz package of chocolate chips (I use special dark) and return to oven for 1 minute. Spread melted chocolate over matzo with spatula. Sprinkle Heath bar and pecans over and press lightly into chocolate.
  5. Refrigerate. Break into pieces. I will often freeze these.
