Peach Meringue Cake
- 1/2 c. butter, softened
- 1/2 c. sugar
- 4 egg yolks
- 2/3 c. cake flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. milk
- 4 egg whites
- 3/4 c. sugar
- 1 tsp. vanilla
- 3/4 c. chopped pecans
- sliced peaches
- whipped cream
- Preheat oven to 325u0b0.
- Grease and flour two 8-inch round cake pans.
- Cream butter and sugar with mixer; add egg yolks and mix thoroughly.
- Combine flour, baking powder and salt.
- Add dry ingredients to egg mixture alternately with milk.
- Pour into cake pans.
- Set aside while preparing meringue.
- Beat egg whites until foamy but not dry.
- Gradually add sugar by tablespoon until all is used.
- Add vanilla.
- Divide meringue and spread over unbaked cake batter.
- Sprinkle with nuts.
- Bake 20 to 25 minutes, being careful not to overbake.
- Cool.
- Cut into wedges to serve.
- Top with sweetened, sliced peaches.
- Garnish with whipped cream.
