Use What You'Ve Got-Delicious And Easy Seafood Bisque
- 1 tbs. Olive Oil
- 1 Medium Sweat onion diced
- 1 tbs. minced garlic
- 1/2 tsp. basil
- 1/4 tsp. oregano
- 1/4 tsp. paprika
- 1 tbs. Corn starch
- 1/4 to 1/2 C. heavy cream
- cayenne pepper
- salt
- pepper
- 1 tsp. chicken bouillon granules
- 1 can diced tomatoes (can use basil, oregano, garlic kind)
- 1 can vegetable broth
- 1 C. water
- 4-8oz bay scallops
- 4 oz small or medium shrimp
- 1 can lump crab meat drained
- heat sauce pan to medium heat
- add oil, onion, garlic, basil, oregano, salt and pepper.
- saute for five minutes.
- add paprika and tomatoes.
- keep stirring and let simmer a few minutes.
- add broth, bouillon, water.
- bring to boil.
- add light sprinkle of cayenne pepper if spicy flavor is desired.
- reduce heat and cover, let simmer for 20 minutes.
- bring back up to medium heat.
- add bay scallops.
- boil for 2-3 minutes.
- add shrimp and boil a couple more minutes.
- add crab meat.
- in separate glass mix corn starch with about a 1/2 C. water. add to soup.
- bring to boil.
- reduce heat and add cream.
