Butternut Squash Gratin With Blue Cheese And Sage
- 5 cups (3/4inch) cubed and peeled butternut squash (2 lbs)
- 1/2 cup bread crumbs
- 4 teaspoons olive oil (divided)
- 2 cups thinly sliced onion (1 large, or 2 med)
- 1 tablespoon fresh chopped sage
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper.
- cooking spray
- 1/2 cup (2 oz) crumbled blue chees.
- Preheat oven to 400u0b0
- 1. Steam squash, covered for 10 minutes (until tender)
- 2. Add 2 teaspoons of oil to bread crumbs, toss to combine
- 3. Heat remaining 2 teaspoons of oil in a large skillet. Add onions saute 5 minutes till tender, stirring occasionally.
- 4. Transfer onion mixture to a large bowl.Add squash, chopped sage, slat, black pepper to bowl, toss to combine.
- 5. Spoon squash mixture into a baking dish coated with cooking spray. Bake @ 400u0b0 for 20 minutes.
- 6. Sprinkle with blue cheese and sprinkle with bread crumbs. (EVENLY).
- 7. Bake an additional 10 minutes or until cheese is melted and crumbs are golden brown.
