Angel Hair Primavera
- 1/2 pound Broccoli , cut
- 1/2 pound Carrots , cut
- 1/2 pound Red or Green Peppers , cut
- 1 1/2 pounds angel hair pasta , cooked
- 2 tablespoons garlic, minced
- 1/2 cup chicken broth
- 4 tablespoons fresh basil
- 3 tablespoons sun dried tomatoes, finely chopped
- 2 tablespoons fresh parsley, chopped
- 2 1/2 ounces of parmesan cheese, grated
- 2 tablespoons lemon zest
- 1 cup olive oil
- Heat a large pot of water over medium heat until it boils.
- Place vegetables in steamer, cook until al dante.
- While vegetables steam, cook pasta
- Place large skillet over medium heat. Once hot, add olive oil and garlic. Gently saute garlic.
- Add chicken broth and bring to boil
- Strain pasta and vegetables and add to pan
- Add fresh basil, lemon, parmesan cheese, tomatoes & parsley. Toss pasta thoroughly.
- Serve.
