  1. 1. Preheat griddle to 375 degrees, or heat pan over
  2. medium-high heat. Whisk flour, sugar, baking powder, and salt in medium
  3. bowl. Add egg, milk, and 2 tablespoons melted butter; whisk to combine.
  4. Batter should have small to medium lumps.
  5. 2. Test griddle or pan by sprinkling with a
  6. few drops of water. If water bounces and spatters, it is hot enough.
  7. With paper towel, brush 1/2 teaspoon butter onto griddle (or coat evenly with cooking spray). Wipe off
  8. excess.
  9. 3. Ladle the batter on batches... onto the griddle or pan. When pancakes have bubbles on top and are
  10. slightly dry around the edges, about 2 minutes, flip over. Cook until
  11. golden on the bottom, about 1 minute.
  12. Repeat with remaining batter, using 1/2 teaspoon butter on
  13. griddle for each batch (and wiping off the excess).
