Spiced Lamb Chops
- 1/4 tsp. allspice (ground)
- 1/4 tsp. nutmeg (ground)
- 1/4 tsp. cardamom (ground)
- 1/4 tsp. cinnamon (ground)
- 3/4 tsp. ginger (powdered)
- 1/2 tsp. pepper (ground)
- 1/4 tsp. coriander (ground)
- 1/4 tsp. cloves (ground)
- 1/4 tsp. cayenne (ground)
- 6 Tbsp. butter
- 1 Tbsp. mint, freshly chopped
- 1 Tbsp. parsley, freshly chopped
- 2 cloves garlic, minced
- 1/2 tsp. salt
- 16 small rib lamb chops
- 3 Tbsp. olive oil
- 6 mint sprigs (for garnish)
- 6 lemon slices, seeds removed (for garnish)
- Mix the spices in a bowl.
- In another bowl, cream the butter with a fork, adding 3 teaspoons for the spice mixture, the mint and the parsley.
- Add garlic to the butter with the salt; mix well.
- Set aside to allow the flavors to mellow at room temperature.
