Macadamia Nut Cake

  1. Grease and line with brown paper, well greased 3 (1 pound) loaf pans, or 1 tube pan.
  2. Beat shortening and sugar until fluffy. Add eggs and flavorings. Beat well. Blend flour and baking powder. Add with fruit and nuts. Bake at 250 degrees for about 3 hours, with a pan of water (1/2 inch deep) on the bottom of the oven.
  3. Check at 2 1/2 hours for small loaves. Once cooled, soak loaves in rum soaked cloths.
