Macadamia Nut Cake
- 2 c. gluten free flour
- 1 1/2 tsp. baking powder
- 1 c. shortening (butter)
- 1 c. sugar
- 5 eggs, well beaten
- 1/2 tsp each: orange, lemon, rum flavorings
- 4 c. (32 oz.) total candied pineapple, cherries, any combination fruit cake mix may also be used
- 2 c. macadamia nuts (1, 7 oz. jar, 1, 3 1/2 oz. jar), chopped
- xanthan gum
- rum to soak loaves
- Grease and line with brown paper, well greased 3 (1 pound) loaf pans, or 1 tube pan.
- Beat shortening and sugar until fluffy. Add eggs and flavorings. Beat well. Blend flour and baking powder. Add with fruit and nuts. Bake at 250 degrees for about 3 hours, with a pan of water (1/2 inch deep) on the bottom of the oven.
- Check at 2 1/2 hours for small loaves. Once cooled, soak loaves in rum soaked cloths.
