Fruit Tarts
- 1/2 c. scalded milk
- 1/4 c. granulated sugar
- 1/8 tsp. salt
- 1 Tbsp. flour
- 1 egg, well beaten
- 1/4 tsp. vanilla extract
- 1/2 c. heavy cream, whipped
- 1 1/2 c. washed, hulled berries
- 1/4 to 1/2 c. currant jelly
- 6 baked 3-inch tart shells
- Make and bake tart shells.
- Scald milk.
- Mix sugar, salt and flour with beaten egg and pour scalded milk slowly over this mixture, stirring constantly; then return to double boiler and cook until thick, stirring constantly.
- Add vanilla; cool.
- Just before using, fold in half the whipped cream; place layer of berries on top.
- Heat currant jelly until it melts and put about 1 tablespoon on top of each tart.
- Top with teaspoon of whipped cream.
- Serves 6.
