Fruit Tarts

  1. Make and bake tart shells.
  2. Scald milk.
  3. Mix sugar, salt and flour with beaten egg and pour scalded milk slowly over this mixture, stirring constantly; then return to double boiler and cook until thick, stirring constantly.
  4. Add vanilla; cool.
  5. Just before using, fold in half the whipped cream; place layer of berries on top.
  6. Heat currant jelly until it melts and put about 1 tablespoon on top of each tart.
  7. Top with teaspoon of whipped cream.
  8. Serves 6.
