My Favorite Mexican Chicken Casserole
- 1 whole chicken or 6 chicken breast
- 1 bag of Spicy Doritoes
- 2 Tbsp of purple onion(chopped finely)
- 1/2 cup chopped bell pepper
- 1 cup grated sharp cheddar cheese
- 1/2 cup of shredded montery jack cheese
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can of HOT Ro-Tel
- 2 Tbsp chili powder
- 1 tsp garlic salt
- 3 Tbsp chopped jalapenos
- 1 tsp cayenne pepper
- garlic powder to taste
- 1/2 cup chicken broth
- roast chicken and remove from bones. Place a layer of chips in bottom of 9 x 13 inch pan or casserole. Pour enough chicken broth (1/2 cup) broth over chips to just moisten. Mix shredded chicken with all other ingredients except for the cheese together and put over chips. Top 1/2 with both cheese and bake uncovered @ 350 for 45minutes.
- Put the other 1/2 of cheese during last 10 mins of cooking
